About Via Rosa
Do you plan your trips around food? Where and what to eat? With visits to museums, villas, and monuments squeezed in before the next meal? Us too! But if you are like us, you also realize that food is not an end in itself. The entire experience of eating in a country not your own - getting there, ordering, talking to the people who prepare, sell, or grow the food - is just as important as what is in your belly. There is a cultural import to every bite we eat.
Food may be the map you use to get to a specific place, but we believe it is also the key that opens up an entire world. Nowhere is this more true than in Italy. All roads may lead to Rome, but we would like to invite you to follow us on the roads that lead out of it. To explore the dishes, customs, and recipes in out-of-the-way regions, towns, villages, and homes that remain off of most travelers' radar. More importantly, we would like to introduce you to the people who keep these traditions alive.
Our friends and colleagues have generously agreed to open their homes and businesses and to share their knowledge (and cheese and pasta and bread and wine!) by inviting us to gather around the table.
Our trips adopt the culture of food as our compass because we think this is not only the most delicious way to travel but also the most fulfilling. When we learn about a product like freshly made Sicilian sheep’s milk ricotta, for instance, we are learning about something that reveals a past and current history that exists only in one very specific place. It is this sense of place that we would like to share and that you will take home with you.
Who We Are
Our Co-Founder
Elizabeth Minchilli
Via Rosa Tours was founded by Elizabeth Minchilli. After a childhood spent partly in Italy, she began her professional career as an academic, writing her dissertation on sixteenth-century garden architecture. During a break from working in the Medici archives, she met her husband, Domenico, and her career changed courses. After 20 years of writing for magazines on topics ranging from design and gardens to restaurants and food, she switched gears in 2010 and began offering food tours in Rome. Her business grew over the years, and Via Rosa, which she founded with her two daughters, Sophie and Emma, now offers week-long food tours to places like Puglia, Sicily, Parma, Umbria, and Tuscany.
Elizabeth is the author of 9 books on Italy, including her most recent, The Italian Table, Eating My Way Through Italy, and Eating Rome. She has written for over 40 publications, including Bon Appetit, Food & Wine, and The New York Times. She has shared much of her writing on her popular blog and now writes one of the best travel and food newsletters on Substack. She documents her daily life on Instagram and TikTok.
Sophie and Elizabeth appeared on CBS Sunday Morning recently, sharing their beloved town of Bari.

Sophie Minchilli
Sophie, Elizabeth’s daughter, freely admits that her life revolves around food. She graduated from the London College of Communication, writing a dissertation on food in Italian cinema. Sophie has been leading market tours in Rome and week-long food tours throughout Italy since 2015. Her favorite part of her work is meeting the people who provide, grow, and transform the food she shares with her clients. Her direct connection to an often older generation of farmers, restaurant owners, baristas, and shopkeepers is joyfully visible in the videos she shares on social media. Sophie has shared her personal philosophy of taking things slow and enjoying life in her book. The Sweetness of Doing Nothing: Living Life the Italian Way with Dolce Far Niente was published by Harper Collins UK in 2021.

Emma Minchilli
Elizabeth’s daughter Emma is the operations manager of Via Rosa. She is the behind-the-scenes presence that makes sure all the details of every tour run smoothly.
